FOR THE SALAD:
* 1/4 small finely diced red onion
* 1 can chickpeas, drained
* 1 red bell pepper, chopped
* 1 orange or yellow bell pepper, chopped
* 1 green bell pepper, chopped
* 1/2 large seedless cucumber, chopped
Optional feta cheese.
FOR THE DRESSING:
* 3 tablespoons extra-virgin olive oil/ flaxseed oil
* 3 tablespoons red wine vinegar/apple cider
* 1 teaspoon Himalayan rock salt
* 1/2 teaspoon black pepper
* soak onions in water. Drain after 30min
* Mix ingredients in a serving bowl, top with the dressing and drained onions. Pop in the fridge for 30minutes to marinate.
